I hope you had a fabulous St. Patrick’s Day! I had a little celebration of my own yesterday – a much smaller one, a happy dance over realizing I’ve published 900 posts! Wow. That’s sort of hard to believe.
It’s been just a little over 3 years since I started this blog, so that’s about 300 posts each year. That’s about five posts per week for most of them. And THAT’s why I miss you on days when I don’t publish a post. I feel such a connection with all of you!
Question of the day: How do you make a delicious fruit salad when there’s very little fresh fruit in season?
I’ve got a secret to share…a trick that will conquer any fruit salad dilemma.
My friend JA gave me this recipe a few years ago. I’ve made a couple of changes and additions, so it’s mine now – right?
Don’t gasp when I tell you the secret – the base to this salad that’s mostly made from canned fruit (NOT fruit cocktail).

It’s really big.
Are you ready?
I know! Gasp, right?
I realize this isn’t exactly healthy and diet-friendly and all that, but you have to choose your battles. There are some fresh fruit additions!
- 1 (21-oz) can of peach pie filling
- 1 large (15-oz) can of Mandarin oranges, drained
- 1 large (20-oz) can of pineapple chunks, drained
- 1 (10- to 15-oz) carton of frozen strawberries in juice (thawed)
- 8 ounces of frozen sliced strawberries (without juice)
- 2 large bananas, sliced
- 1 pint fresh blueberries
- Stir ingredients together in a large bowl. Serve.
- Refrigerate leftovers (if there are any!).
For a bonus, here’s another little secret (no gasps here): it can be a dessert, too.
This fruit salad is wonderful over Angel Food Cake. Give yourself a break and pick one up at the grocery store.
Of course, if you have a fresh baked lemon pound cake, that would taste grand, too!
