We’re counting down to Valentine’s Day, so I thought I would share something you can cook for your Valentine – something easy (a gift to you) and delicious (a gift to you and yours).
A dear friend shared this recipe with me during a time when I had no opportunity to make it. Her sweet, hand-written card eventually found its way into my recipe file.
Recently, I came across the recipe while shuffling through the casserole section in search of “what’s for dinner tonight”. When I saw it, I knew it was time. HH was ripe for something new to eat.
I had no frozen cheese ravioli required for the recipe, but I did have a bag of beef ravioli in the freezer. I went for it anyway. What could be wrong with a man getting a little beef in his meal? Nothing. of course!
The “recently” in question was in January. Yes, January! Why did I wait so long to tell you about it? The ravioli…the black beans…the salsa…the cumin…and the cheese…yum. (I deeply apologize for the delay!)
One look at the pictures and you might notice why I was hesitant. It happened after my camera stopped working, and these point and shoot camera pics aren’t the greatest. Anyway, I decided it’s not your fault the pictures aren’t top-notch.
Why make you miss out on a great thing just because of my challenges? (Not to worry – all is well now with a new camera that works beautifully.)
I’m happy to report that the Tex-Mex Ravioli recipe is a true winner. HH raved about it (the proof of truth). My “do I really have to eat leftovers” hubby actually asked for the leftovers the following day!
Of course it’s a winner – it’s a Southern Living recipe. Well, except for the frozen ravioli switch-er-oo.
