I may have created a tongue-twister title, but the reason is a good one. With this biscuit mix, biscuits really ARE a quick fix!
Since publishing my 3-ingredient scratch biscuits, I’ve been itching to share this nifty time-saving trick.
Last summer, I showed you my technique for making prepackaged graham cracker pie crust mix. This biscuit mix is very similar.
Since it’s best to keep the ingredients as cold as possible when making biscuits, I decided to put everything together (except the buttermilk) and keep it in the freezer until ready to mix.
The first step is to grate 3 tablespoons of frozen butter with a large hole grater.
Add it to 1-1/2 cups of self-rising flour. I combined mine in a bowl for these pictures, but you can easily add the butter to flour already loaded into a zip top bag.
Toss the flour all around the butter to coat.
The mixture is now complete. These little packages are so handy to load individually into a larger, gallon-size bag. It saves so much time to do several at the same time. Keep the mix in the freezer until ready to use.
Combine the frozen biscuit mix with buttermilk (usually 2/3 cup). Roll out onto a floured surface and do the folding technique shown in this Southern Living Biscuit Video.
I’ve perfected my technique into a fairly neat rectangle. Have you ever seen anyone make square biscuits?
I dislike cutting rounds because of the scraps between the rounds. I question the quality of dough when you collect scraps to remix and cut and again remix and cut…and the final bit never comes out right in the end. Mr. End Biscuit is always a badly shaped runt! He looks so pitiful on the pan.
The squares come out to a nice, even eight. All uniform, no runt!
Did you notice the flaky layers of that batch? I think my Crafty Artisan Bread Making* class skills are influencing my biscuits. 😉 It’s become rather fun to
play with manipulate dough.
HH especially likes biscuits with sausage patties, and the round patties stack fine with the squares. Sausage biscuits are a Southern thang, y’all.
HH tells a story about a trip to Silverton, Colorado. He stepped into a restaurant for breakfast and ordered a sausage biscuit. The waitress looked at him as if he were alien…said she didn’t know what that was.
Apparently, he’d ordered a non-menu item. Ms. Confused Waitress said they didn’t have those and wouldn’t know how to make them. Really?
Well, that just proves HH was too far from home!
No slight against Silverton, y’all. It’s a wonderful place, and we’ve traveled through there purposely for HH to show me the beauty. He holds no grudges about the sausage biscuit episode, but he also knows to order something else! 😉
