This salad is terrific to use when you have leftover chicken of any kind. I’ve used rotisserie chicken, lemon chicken, baked chicken – well, everything except barbecue chicken.
I’ve also used leftover turkey meat after Thanksgiving, and it is delicious – and a nice change from the flavors we associate with Thanksgiving. I’m not saying those flavors are bad (they are not!), but sometimes too much of a good thing is, well…too much.
This is one of my favorites for another reason, too. It is so easy! All you do is chop some onion (and celery if you like, which I do but didn’t have on hand this time).
In a bowl, mix your chicken pieces with the other ingredients,
stir, and make your sandwich (or you can eat it the girly way, with crackers).
Here’s the recipe for you to print.
- 3 cups cooked chicken (or turkey) pieces, diced
- ½ small onion, chopped fine
- 2 celery stalks, chopped fine (optional)
- 1 teaspoon dried Basil
- 1 Tablespoon lemon juice
- ¼ teaspoon black pepper
- ¾ cup mayonnaise (or to taste)
- Mix all ingredients together and serve. Keep refrigerated.
