Our New Year’s resolutions always include getting healthy, losing weight, starting a work-out program, or some other adjust-our-shape promise. Here it is – already a third of January marked off the calendar, and the scales haven’t marked off any pounds!
Are we all in the same boat here? Every year, I say I won’t do it – gain weight at Christmas. Then, of course, all those goodies are all over the place! Who can resist, y’all?
It’s a rainy, dreary day here in North Mississippi, and not very cold but cool enough for some filling soup. In my quest to lean down the grocery bill, I’ve been avoiding a much-needed trip to the store. My goal today was to make something delicious, but healthy, with items currently stored in my pantry and freezer. In the mood for soup, I filed through my recipes and found one that fit the bill.
Easy, 6-ingredient Tortilla Soup (OK, 7 if you count the water). 3 cans chicken broth, 8 chicken tenders, 1 can Original Rotel, 2 chicken bullion cubes, 1 cup water, 1 cup brown rice, and 1/3 cup salsa. Perfect!

This soup is delicious and has plenty of “pepper” heat. If you like to set your mouth on fire, kick up the heat by using a hotter Rotel and salsa. I serve mine with tortilla chips. Hope y’all enjoy it as much as my family did!
