I love all forms of chicken salad. And during this week of What To Do With Turkey Leftovers, I wanted to share another one of my favorite sandwich and cracker spreads I make with leftover chicken or turkey.
This salad is packed with flavor and easy to assemble – just a tish of chopping and only one can to open.
I chop a little leftover turkey or chicken, open and drain a can of crushed pineapple, chop a few pecans and grapes (and sometimes an apple), and fold it all together with some mayo. Salt and pepper it to taste.
How hard is that? And, look how yummy!
Here’s the recipe so you can print it and have it ready for Turkey Day leftovers next week.
- 2-1/2 cups chopped, cooked chicken (or turkey)
- 1 small can crushed pineapple, drained
- ½ cup chopped pecans
- ¾ cups chopped grapes
- ¾ cup mayonnaise
- ½ cup chopped Red Delicious apple (optional)
- Salt and pepper to taste
- Mix all ingredients together and serve or refrigerate for later.
