Potato Pierogies and Ham Casserole

A delicious casserole with ham, potatoes, cheese, onions, and green peas.
  • 1 small onion, chopped
  • 1 Tablespoon each of butter and olive oil
  • 1 cup chopped ham
  • ¼ teaspoon thyme
  • 1 cup chicken broth
  • ⅓ cup heavy cream
  • One 17-oz. pkg. Potato and Cheddar Pierogies
  • 1 cup frozen green peas
  • ½ teaspoon salt
  • ¼ teaspoon white pepper
  • 4 slices Swiss cheese
  1. Saute onion and ham in butter and olive oil over medium heat until onions are transparent.
  2. Toss with thyme.
  3. Pour chicken broth over mixture and line pan with Pierogies. Cover and cook about 6 minutes until Pierogies are tender, turning midway.
  4. Remove cover and stir in peas, cream, salt and pepper.
  5. Transfer to casserole dish prepared with vegetable spray. Top with cheese and bake in 350 degree oven until cheese is melted, 10-15 minutes.
