This week I’ve been sharing some ideas for what to do with your leftover turkey. Of course, there are many solutions, but I’ve chosen to share some salads that can be made with turkey, as well as chicken, and all throughout the year.
When I tasted this salad, which was served on a croissant roll (yum!), I knew I had to include it this week. I contacted the chef – a friend at our church – who sweetly shared her recipe with me.
When you see the recipe, you’ll notice the measurements for several ingredients are to your choosing – according to how much you like that ingredient. My friend said her family also likes this salad with bacon bits and chopped pecans.
I made a test batch over the weekend (excluding the bacon bits and pecans) and enjoyed eating it earlier this week. Please let me expound on enjoyed. What I mean is, I really enjoyed this salad!
I may have been a little heavy on the dried cranberries, but that’s my favorite part, y’all.
I think you’ll really like it. Here’s the recipe to copy and share.
- 3 cups of chopped, cooked turkey meat or chicken
- ½ - ¾ cup mayonnaise
- ½ - 1 cup dried cranberries
- ⅓ - ½ cup sweet pickle relish, drained
- ¾ - 1 cup chopped Red Delicious apple
- ½ - 1 cup chopped pecans (optional)
- bacon bits to taste (optional)
- salt and pepper to taste
- Combine all ingredients and serve.
The next batch I make will include pecans for sure, and probably the bacon bits. I’m not a huge bacon bits fan, but I might become one if I like it as much as my friend’s family does.

Oh, I almost forgot to mention, the one salad I didn’t post this week was one I published earlier this year, and it is divine! I hacked a restaurant recipe and came up with what I think is an identical sandwich in Copy-Cat Chicken Salad.
