Don’t we love our quick and easy summer pie recipes?
Chocolate Mint Pie is not only quick to make, it’s quick to disappear at our house. With the oncoming season of summer, y’all need this recipe. It meets all the criteria of a keeper, because it’s light and fluffy and minty and chocolaty, and just plain good. It’s refreshing on a hot summer day.
“Would you like a slice of pie, Ma-am?”
“Why, thank ya. I believe just a sliva (translation: sliver) will be fine. Just a sliva, please.” That’s how we Southern women are supposed to accept pie. Proper. Asking for a huge piece of pie wouldn’t be lady-like, y’all. (Our men take care of the huge pieces of pie.)
When you’re in a doctor’s office waiting room, and you find a recipe you’d like to try, do you tear out the page? I’ve always wanted to do that. (So tempting!) Why is it we find so many good recipes when we’re looking through those magazines stacked on all their tables?
I’m sorry, but I didn’t jot down the name of the sponsor. You can imagine, it’s probably Keebler or Jell-o or Kraft.
I still have this pie recipe written on scrap paper from my purse that day I copied it from the magazine ad. Doctor’s offices should provide proper paper for copying down the recipes (wink), to keep us from tearing pages out of their books. I don’t know about you, but my purse note papers are pretty small.
Lucky for me, this recipe calls for only a few ingredients, so I didn’t need a big piece of paper.
1-1/4 cup cold milk
1 small box instant chocolate pudding mix (4-serving size)
1/4 teaspoon peppermint extract
8-oz. carton of Cool Whip
1 Keebler Ready Crust (graham or chocolate)
Let’s b…Let’s c…Let’s whisk! Blend the milk and pudding together with a whisk for 1 minute. Add extract and Cool Whip.
Whisk until no white swirls remain.
Spoon mixture into crust. Well, I poured it. You can tell by the edges of my pie. Refrigerate for five minutes until set. Hey, that isn’t long. I think I can wait five minutes.

It’s the special edition from Keebler. It adds bling to your pie.
Garnish your pie with 3 Tablespoons of crushed peppermint candies, Andes brand creme-de-menthe baking chips, or your favorite chocolate bar, chopped to pieces.
I chopped up some left-over Nuggets semi-sweet chocolates with almonds. And it was good. 🙂
