It’s the healthy version, y’all! ‘Cause it has spinach to make you healthy and strong – like Popeye the Sailor Man. (Sorry, I think of him every time I make anything with spinach.)
After ripping this recipe from a newspaper coupon mailer about ten years ago, my family has often replaced a meal with this dip. I don’t know who published it, but most likely, it was Kraft.
Since I’m the sharing kind of Southern girl, here’s the recipe:
1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
1 lb. (16 oz.) VELVEETA cheese product, cut into 1/2″ cubes
4 oz. (1/2 of 8 oz. block) cream cheese, cubed
1 can ROTEL Diced Tomatoes & Green Chilies, undrained
8 slices bacon, cooked crisp, drained, and crumbled.
Combine all ingredients in microwaveable bowl. Microwave on high 5 minutes, stirring after 3 minutes. May take more time than 5 minutes, so stir and return to microwave until all VELVEETA is melted.
Prep time: 10 minutes. “Melt time”: 5-7 minutes. Yield: 4 cups

Since I have challenges sometimes with our microwave, I make this on the stove. I also leave out the bacon until the last, after VELVEETA is melted. Why? I don’t know. More time to nibble on it maybe?

Fun Son says, “The only thing better than bacon is bacon wrapped in bacon.” We ALL love bacon at this house!
Speaking of Fun Son, he’ll be here this weekend. That’s why I’m making this yummy stuff. These college kids work so very hard to make good grades, depriving themselves of any fun at all ;-), never eating anything good, broke all the time, so they need spoilin’, y’all!
And, I think I’ll even do his laundry! That’s how much I miss him.
VELVEETA is all melted now.
