I can’t believe it’s almost May! Can you?
With Mother’s Day ahead, let’s consider some options for celebrating our moms. If you’re the mom to be celebrated, maybe you could print some recipes, put them in an envelope, and send them incognito – with no return address. Or…be bold and send them the links (or the link to this page) by email!

Apple Spice Pork Recipe (Two Entrees in One) is one from year before last that seems ready for a rerun (at our house, anyway). Since the slow cooker is already in use for the entree, Salt Crusted New Potatoes come to mind for a side dish. We always need a green vegetable on the plate, so for this meal, I chose Green Bean Bacon Bundles a l’orange. Use leftover beans you cooked earlier in the week, and they’re a snap (pun intended) to put together the night before cooking. Make-ahead Crunchy Romaine Salad would be a side to lighten the meal a bit. Banana Pudding Especialle would be our family’s dessert of choice.

My grandmother (Handy Builder Dad’s Mom) loved to fish, and this Parmesan Fish Filet is my favorite home-cooked fish recipe – quick and easy. I think Grandmomma would have liked it, too. I usually cook a side of simple brown rice, but if you prefer to make Hash Brown Casserole Made Easy, I understand. I recommend not adding the bratts, though. A slow cooker style side is a nice option. For green on the plate, Baked Baby Kale Chips gives a whole new meaning to fish ‘n chips! Repeat the fish recipe citrus with Nutty Orange Feta Salad. That makes my mouth water! Does it yours? Finally, serve the Easiest and Tastiest Fruit Salad as a side – or as dessert!

You may have noticed each menu has one slow cooker item. I find it so handy to have the slow cooker going on the side while busying the stove and oven(s) for everything else.
While Crock Pot Tortellini Stew is a hot soup, it’s very light and delicious at the same time. The friend that shared that recipe on our girls trip two years ago also served us this Egg Roll/Wonton Salad recipe. It’s very tasty, so I offer it as one salad option. Another option is my friend Deb’s Springy Strawberry Salad recipe. It is awesome, too. (How will we fit in so many salads, right? The choice is tough!) A nice repeat of the strawberries are these easy and quick Berry Top Brownie Bites as a dessert. These are wonderful for hubbies or kids since they can purchase mini brownies in the grocer’s baked goods section, a pint of fresh strawberries, and a carton of ready-made chocolate frosting. Since HH loves a bread of some sort, this recipe for Home-Made Swedish Crescent Rolls is for the must-have-bread men at the table. (Is it ever really all about moms?)
Crescents are a little time consuming, but you’ll have rolls in the freezer (to eat or give away) for a good long while.
